Explanations:
1) The first quote is George and Lennie talking about their dream as farming. Lennie is saying most farmers are lonley and have nothing to live for, but he mentions that it would be differen't for him and George if they were to become farmers. lennie is saying he is thankful that he has George to spend his life with and talk about memories.
2) In the second quote, nature is being compared to things in the book. The thought of the snake being eaten by the heron, is George (heron), killing Lennie (snake). Lennie is a guy with no intentions to hurt people but accidentally does. The snake was being related to Lennie because it was just gliding through the water with no intentions to harm. George is a nice guy that never hurts anyone so that is why he is related to the heron, but he has to kill Lennie before he harms anyone else.
3) In the third quote lennie is saying that there are many people that want to own a farm and have land, but most of them do not end up doing that, because it is just a dream for them.
